Job description: JOB DESCRIPTION Khansama Tandoori Restaurant
functions & Job responsibilities:
» Cook Indian Sweets & Desserts like Gulab Jamun, Ras Malai, Moong Daal Halwa, Gajar Halwa, Badam Kheer, Jalebi, Kaju Burfi, Khoya Burfi, Laddu etc
» Cook Indian Snacks like Vegetable Samosa, Pakoras, Paani Poori, Chaat Items, Dahi Bhalla, Poori, Bhatura, Pav Bhaji, Papdi etc
» Ensure the food quality and the presentation of the prepared dishesEnsure the prompt and speedy delivery of orders
» Check the quality of raw and cooked food products to ensure that the standards are met
» Take stocks and contact with the purchase & catering managers to ensure the adequate food items are available to produce the appropriate menu items.
» Receive goods and supplies after checking the quality and quantity.
» Store of raw materials and ingredients and ensure that all the food storage and preparation of all food items meet the temperature guidelines.
» Set up and manage buffet stations with all necessary supplies.
» Inform the restaurant managers and captains about the unavailcapability of certain run our dishes.
» Ensure personal hygiene and safety requirements.
» Ensure the cleanliness of the kitchen, cooking utensils and equipments.
» Monitor the performance of adjunct chefs, kitchen helper and trainees.
» Ensure that all products used for dishes are of a high standard.
» Ensure that all health, safety legislation and guidelines are implemented, adhered to and reviewed regularly.
» Maintain cleanliness of all areas after service.
» Responsible for preparing kitchen cleaning rosters. Requirements:
Education & practice
» Bachelors Degree in Hotel Management ( B.H.M. / B.Sc HM )
» A 3 years of hands on cooking practice in a reputed North Indian Kitchen .or Bachelors in any subjects like Arts, Commerce, Science ( B.A. / B.Com. /B.Sc. )
» A mandatory Diploma or Degree, Certification Course in Production of Indian Desserts & Sweets
» At least 6 years of hands on cooking practice in a reputed North Indian Kitchen .The ideal candidate:
» Must be able to read write and understand simple English
» Must have basic expertise of computers (MS Word, Excel Power Point etc ).
» Must be able to join in two weeks from the date of selection / approval
» Must be able to work on weekends ( Friday, Saturday & Sundays ) and Public Holidays
» Must be able to do overtime whenever required.
» Must be able to work in tandoor department as a relief in case of any acute shortage of the tandoor chef eg. sickness, weekly off Day or annual leave
» Physical work required.
