Job description: JOB DESCRIPTION We invite suitably qualified candidates to join us as:
Chinese Master Chef
Responsible to supervise the kitchen operations in the assigned Chinese restaurant.
» Responsible for all Chinese food production for the Chinese Restaurant kitchens.
» Develop menus, food purchase specifications and recipes.
» Supervise culinary staff, ensure adequate staffing and implement training to increase staff expertise about safety, sanitation and accident avoidance principles.
» Develop and monitor food and labor budget for the section.
» Plan Chinese ala-carte and promotional menu for the Club’s Chinese restaurant.
» Schedule and coordinate the work of kitchen employees to assure that food preparation is economical and technically correct and within budgeted labor cost goals.
» Approve the requisition of products and other necessary food supplies.
» Ensure high standards of sanitation, cleanliness and safety are maintained all over all kitchen areas at all times.
» Implement control to minimize food waste.
» Prepare reports relating to budget; projection and monitor actual financial results, with corrective actions to be taken when necessary.
» Attend F&B staff and management meetings.
» Consult the Executive Chef about food production aspects of special events being planned.
» Cooks or directly supervises the cooking of items that require skillful preparation.
» Evaluates products to assure that quality, price and related goods are consistently attained.
» Develops procedures and measures for the kitchen to enhance quality; continually updates written policies and procedures to reflect state-of-the-art techniques, equipment and terminology.
» Visit the dining area periodically when Information technology is open to welcome members.
» Apply workplace safety and health policies to ensure a safe working environment at all times. Requirements:
» Certificate in Culinary expertise, or its equivalent.
» Minimum 6 years’ related working practice in culinary in resorts and up-market hotels, specializing in Chinese cuisine.
» capability to supervise overall kitchen operations.
» expertise of product innovation and development in a Chinese kitchen.
» Excellent organizational and management expertise.
» Strong interpersonal and communication expertise, both oral and written, and positive attitude towards fostering teamwork among associates in support function.
» capability to lead, motivates a large team of staff, adapt, embrace strong cultural diversity, and work in multi-ethnic teams.
